Mini Cookie Dough Pies

One of our favorite uses for Billy G’s Gourmet Golden Classic Cookie Dough is mini sweet pies! Not only is our Golden Classic base a delicious, light-tasting base for pies, it cooks in only 10 minutes! These little dessert pies are so easy to whip up in a hurry… perfect for the odd surprise visitor. Discover five of our favourite fillings for mini sweet pies with Billy G’s Gourmet Golden Classic Cookie Dough.

Preparing The Base!

Although you could use any of Billy G’s wonderful flavours for the base of your mini sweet pies, we recommend using Golden Classic. This unflavoured dough is the perfect base for pies, and cooks perfectly in only ten minutes!

After thawing your tub of Billy G’s Gourmet Cookie Dough, lay it on a clean surface. Using a rolling pin, roll out the cookie into a flat sheet, about 1.5cm thick.

Select a cupcake tin, and find a round glass, bowl or cookie cutter, about the size of the cupcake tin hole. Once you have greased the cupcake holes, gently lay your cookie dough circles in the hole, shaping them to fit. Be careful not the break the dough!

 

Our Favourite Fillings

The best part of using Golden Classic as your pie base is that it goes with everything! We recommend popping your base in the oven for a few minutes before adding your fillings, and then rebaking for 5-10 minutes.

 

Smores: Choc and Marshmallow

Talk about decadence! This choc marshmallow filling is the sweetest of them all!

Once you had laid the base for your mini pies with Golden Classic Dough, you can add a spoonful of choc hazelnut spread (like Nutella) or even a square or two of chocolate. Then, place a marshmallow on the top! Put these in the oven to melt the chocolate and lightly toast the marshmallow – ta da! You have made a delicious Smore Mini Pie!

Lemon Meringue

Lemon meringue pie is sweet and zesty… and perfect in bite size! These little lemon meringue pies require a bit of extra effort compared to some of the other fillings, but are absolutely worth it!

There are lots of easy recipes for lemon meringue pie. Our favourites are are from Sugar Salt Magic and Taste.com.au. Simply skip any steps relating to the base/pastry, using Billy G’s Gourmet Classic Cookie Dough instead.

Apple and Cinnamon

We couldn’t possibly make a list of the best mini sweet pies and not include the classic Apple and Cinnamon! These little pies are wonderful to have on hand (even frozen!) for a special weeknight dessert.

Use tinned apples or stew your own to flex your muscles. Then, add a sprinkling of brown sugar and cinnamon, and you’re good to go!

Use some of your rolled Billy G’s Gourmet Golden Classic Cookie Dough, and cut thin rectangular strips to lay over the top of your pies. Bake for 5-10 minutes until the tops are golden brown. Wha-la! Perfect, delicious apple and cinnamon mini pies, ready to enjoy.

Caramel Tart

Similar to Smores, mini caramel tarts are one of the sweetest ways to use Billy G’s Gourmet Golden Classic Cookie Dough!

You can make your own caramel filling using a recipe like this one from Cook It Real Good, or purchase tinned baking caramel from your local supermarket. Top with whipped cream, pecans or berries and you have a devilish mini sweet pie in less than 10 minutes.

Mixed Berry

Berries are one of the easiest fillings for mini sweet pies – and definitely a showstopper! The beautiful colours from mixed berries make them pop on your plate, showing off your baking skills to friends and family!

Use fresh or frozen berries to create your mixed berry filling. Simply simmer your berries for 20-30 minutes with castor sugar, until most of the liquid has reduced and you have a thick, berry mix! Spoon into your prepared cookie bases, and lattice the top with thin strips of Billy G’s Gourmet Classic Cookie Dough!
