Recipe: Cookie Dough Cheesecake!
Cheesecake is one of the most popular desserts – it’s perfect for any occasion! Billy G’s Gourmet Cookie Dough is of course the secret ingredient for a special take on this fan-favourite! Discover how Billy G’s Gourmet Cookie Dough can transform your next cheesecake!
Cheesecake is already a delightfully sweet dessert, so you want to keep to some of the lighter cookie flavours for this recipe! We recommend using Billy G’s Gourmet Golden Classic for the base of your cheesecake. But to mix in, you could any flavour of Billy G’s Gourmet Cookie Dough! We think these ones would be the best for your Cookie Dough Cheesecake:

- Raspberry White Chocolate
- Triple Choc
- Billy G’s Gourmet Golden Classic Cookie Dough
- 1 tablespoon unflavored powdered gelatin
- 1/4 cup cold water
- 455g cream cheese, soft
- 1 1/2 cups icing sugar
- 2 teaspoons vanilla extract
- 2 cups thickened cream, cold
Thaw cookie dough until cool and soft. Preheat oven to 180 degrees C.
Scoop the cookie dough from the tub and press into your oven-proof cheesecake tin. Cookie dough should be approximately 1.5 cm thick for the base of your cheesecake. Bake for 7-9 minutes at 180 degrees C until golden.
When finished, do not remove the base from cheesecake tin. Set aside to cool.
Place 1/4 cup of cold water in a microwave safe bowl. Sprinkle in 1 tablespoon of gelatin, and stir until moisten. Leave sit for 5 minutes, before microwaving until gelatin is completely dissolved (20 – 30 seconds). Set aside to cool.
Place 455g of cream cheese and 1 and 1/2 cups of icing sugar in a large mixing bowl (best sifted). Mix on low speed until sugar begins to mix with the cream cheese. Increase to medium and mix until cream cheese is fluffy and icing sugar is fully combined.
Add vanilla essence and mix through with a spatula.
Add 2 cups of cold thickened cream, whisking on low speed until cream is incorporated. Increase to medium speed, and then slowly to high, until soft peaks form.
If your gelatin has started to turn into a jelly, reheat for 10s to return to a liquid. Reduce your mixer to a low speed, and slowly add in the cooled gelatin mixture. Once it has combined, return to high speed and mix until firm peaks form (they should stay firmly upright).
Spoon your filling onto the cookie base.
Choose your cookie dough for the filling, and thaw. Scoop small amounts and roll into balls. Gently push your cookie dough into your cheesecake.
Refrigerate for at least an hour, preferably overnight. Enjoy!
