Billy G’s Gourmet Cookie Dough brownies work best with our Double Choc cookie dough on the bottom, and Choc Chunk on the top. But, feel free to be creative and use any flavour combination you like! Caramel White Choc, Choc Mint or Strawberry Cheesecake would be YUM on the top layer too!

Ingredients

Brownie Base
  • Your choice of Billy G’s Cookie Dough – but we recommend Double Choc!
  • 9 in x 13 in square, deep dish tray
  • Butter or oil to grease

Cookie Dough Topping
  • Your choice of Billy G’s Gourmet Cookie Dough – we think Choc Chunk, Caramel White Choc or Choc Mint would be the most delicious!
  • Icing, fruit, confectionery or any other toppings you would like

Method

Cookie Dough Base

Step 1

Heat the oven to 180 degrees. Line the baking tray or pizza dish with baking paper, or grease with butter.

Step 2

Scoop the cookie dough from the tub, and lay on a clean surface (like the bench, or a clean cutting board). Push the dough together, so it makes a ball. Place into your baking tray, and spread so that it makes a slab (about 1.5cm thick).

Step 3

Place the tray into the oven. Bake for 8 minutes or until semi-baked. Cool for 30 minutes.

Cookie Dough Topping

Step 1
Scoop the cookie dough from the tub, and lay on a clean surface (like the bench, or a clean cutting board). Push the dough together, so it makes a ball. Using a rolling pin, spread so that your slap is roughly the size of your base.

Step 2
Place cookie dough topping on top of your base, and cut to size. If desired, return to the oven for a further 8-10 minutes, or until golden brown.

Step 3

Prepare any extra toppings and decorate when cool. Enjoy!
