Billy G’s Cookie Caramel Slice

Billy G’s may come pre-prepared, but that doesn’t mean you can’t have fun and add your own flare. Baking is all about having fun, getting your hands dirty, and sharing your marvellous creations with friends and family. The possibilities are endless and the sky’s the limit!

We thought we’d help out with a quick recipe for all of you beginner bakers out there! Follow along as we make Cookie Dough Caramel Slice.

 

Caramel shortbread - Baking

 

This recipe calls for 2x flavours of Billy G’s Cookie Dough – 1 for the cookie base, and 1 for the cookie dough topper. We recommend any of the following flavours for the perfect slice:

  • Caramel White Choc (base)
  • Golden Classic (base)
  • Choc Chunk (edible cookie dough topper)
  • Nestle Smarties (edible cookie dough topper)
  • Triple Choc (edible cookie dough topper)

 

Ingredients

  • 20cm x 30cm Slice Pan
  • Your choice of any 2 Billy G’s Cookie Dough flavours (enough to fill the bottom of a slice pan 1cm thick)
  • 175g butter, softened
  • 1/3 cup caster sugar
  • 1 egg yolk
  • 1 cup plain flour
  • 1/3 cup self-raising flour
  • 395g can sweetened condensed milk
  • 2 tbsp golden syrup
  • 200g dark chocolate, chopped

 

Method

Step 1

Preheat your oven to 180C (160C fan-forced). Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, extending paper 5cm above edges on all sides.

 

Step 2

Press your first flavour of Billy G’s Cookie Dough into the pan, making sure to cover the entire bottom in 1 even slab (about 1-2cm thick). Bake as per the instructions on the Billy G’s Tub.

 

Step 3

Once the cookie base is cooked, it’s time to make the caramel. Combine condensed milk, golden syrup, and remaining butter in a small saucepan over medium heat. Cook, continuously stirring for 15 minutes or until the mixture is golden brown and thickened. Whilst the mixture is still hot, pour the caramel over the base in the pan. Smooth out the surface and bake it for 10 additional minutes or until dark golden. Refrigerate for a minimum of 3 hours or until chilled.

 

Step 4

Once chilled, spread your second Flavour of Billy G’s Cookie Dough over the caramel layer in 1 even slab (about 1-2cm thick) and refrigerate for a further 30 minutes.

 

Step 5

Place the chocolate and oil in a microwave-safe bowl and microwave on HIGH in 30 seconds intervals, making sure to stir after each one. After 1 to 2 minutes the chocolate should be smooth and melted. Pour the chocolate over the cookie dough layer and smooth it out before you refrigerate it for 1 hour or until set.

 

Step 6

Once set, cut the slice into fingers and ENJOY!
