Billy G’s Gourmet Cookie Cups

It’s time to put some flare into your baking! Just because Billy G’s Gourmet Cookie Dough comes pre-prepared doesn’t mean you can’t make it your own! Baking is all about having fun, getting your hands dirty, and sharing your marvellous creations with friends and family. Get imaginative and see what you can come up with!

We thought we’d get you started with this dough-licious idea! Follow along as we make Billy G’s Gourmet Cookie Cups.

This recipe calls for your favourite flavour of Billy G’s Gourmet Cookie Dough. Any of the Billy G’s flavours will work:

  • Caramel White Choc
  • Golden Classic
  • Choc Chunk
  • Nestle Smarties
  • Triple Choc
  • Raspberry White Choc
  • Anzac Biscuits
  • Strawberry Cheesecake
  • Mint Choc
  • Even Doggie Dough for your favourite furry friends (not for human consumption… just putting that out there)

 

Ingredients

Cookie Dough Cups:
  • Your choice of Billy G’s Cookie Dough
  • 2x Regular Muffin Tins
  • A small jar or container (must fit in the cups of the muffin tin)
  • Any extra topping you like (i.e. extra chocolate chips, sprinkles, dried fruit etc.)

 

Cheesecake Mousse Filling:
  • 1 cup heavy whipping cream cold
  • 8 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • chocolate sauce optional

 

Method

 

Cookie Dough Cups:
Step 1
Preheat oven to 350°F. Spray 2 regular-sized muffin tins with cooking spray.

 

Step 2
Using a large cookie scoop (3 Tbsp), scoop Billy G’s Gourmet Cookie Dough into the muffin tins (flat) and add any extra toppings you would like!

 

Step 3

Bake the cookie cups according to the instructions on the Billy G’s Tub!

 

Step 4
Remove the cookies from the oven and immediately use a small jar or container to press firmly down in the centre to create a well. Cool in pans for 10 minutes before placing on a wire rack to completely cool.

 

 

Cheesecake Mousse Filling:
Step 1
Whip heavy cream until stiff peaks (ideally with a cold whisk and in a cold bowl).

 

Step 2
In a separate bowl, beat cream cheese and sugar until smooth, add vanilla and beat until smooth.

 

Step 3

Fold the cream cheese mixture into whipped cream. Pipe into cooled cookie cups. Top with chocolate sauce if desired, and swirl with a toothpick. Refrigerate until set (approx. 2 hours).

 

Step 4
Serve cold and eat within 2-3 days. Or freeze for up to 4 weeks.

 

Step 5

Once set, cut the slice into fingers and ENJOY!
