Irresistible Cookie Sandwiches

Two Ways!

Looking to add a touch of sweetness to your day? Discover the tempting delight of homemade cookie sandwiches!

Get ready to enjoy classic flavours like chocolate and caramel or the comforting taste of PB&J (peanut butter and jam). It’s time to satisfy your sweet tooth and elevate your dessert experience with delicious homemade cookie sandwiches. Let’s roll up our sleeves and start baking for a treat you won’t be able to resist!



  • Billy G’s Cookie Dough (flavour of your choice, preferably one that complements chocolate and caramel)
  • 2 x quality semi-sweet chocolate bars (approximately 113g each), finely chopped
  • 1 cup (8 ounces; 240ml) heavy cream or heavy whipping cream
  • 1 x 125g chocolate chips or chunks suitable for melting (dark or white – your choice)
  • 1 x tin of ‘Top n Fill’ Caramel
  • 1 x small jar of creamy peanut butter
  • 1 x small jar of Jam – your choice (such as strawberry or raspberry)
  • Mini Marshmallows (optional)
  • Powdered sugar (optional)
  • Chopped nuts (optional)



  1. Preheat your oven to the temperature specified on the Billy G’s Cookie Dough tub instructions
  2. Roll out small balls of the cookie dough into uniform sizes to ensure even baking
  3. Place cookie dough balls onto a tray spaced apart with baking paper
  4. Bake the cookies in the preheated oven for 10 to 15 minutes, or until they are golden brown and cooked through. Allow them to cool slightly on the baking sheet before transferring to a wire rack to cool completely

Chocolate Caramel Centre

  1. Remove the lid from the Top’n’Fill Caramel and place it into a bowl. Stir it to allow it to become a smooth and creamy consistency
  2. Place finely chopped chocolate into a heat-proof glass or metal bowl. The finer you chop the chocolate, the quicker it melts with the cream. If the chocolate is in large large chunks, it won’t fully melt
  3. Heat cream on the stovetop until just simmering. If it’s boiling, the cream is too hot and could separate or even burn the chocolate. Once you see little simmers around the edges, turn off the heat and immediately pour the warm cream over the chocolate
  4. Let this sit for a few minutes before stirring
  5. Stir slowly until smooth
  6. Mix in the Top’n’Fill until well combined. Optionally, stir some marshmallows into the chocolate-caramel mixture for added sweetness and texture
  7. Spoon the chocolate-caramel mixture onto the center of each cookie on the baking sheet for the chocolate-caramel sandwich option
  8. Place the remaining cookie dough shapes on top of the chocolate-caramel mixture, gently pressing down to form sandwiches

Peanut Butter & Jam Centre

  1. For the Peanut Butter & Jam sandwich option, spread a generous layer of creamy peanut butter onto the center of each cookie on the baking sheet. Spoon a dollop of jam on top of the peanut butter layer
  2. Serve and enjoy these delicious cookie sandwiches of two different flavours! For an extra touch, consider dusting with powdered sugar or topping with chopped nuts before serving
