You know that moment: the doorbell rings, and suddenly you’ve got unexpected guests walking in with smiles (and empty hands). The kettle is on, the bubbles are chilling, and you are standing there thinking, “What can I whip up that looks amazing… fast?”

That’s where Billy G’s Christmas Fruit Cake Trifle Cups come in: your festive dessert lifesaver.
They are rich, fruity, creamy, and beautifully christmassy, made with a few simple ingredients you can keep on hand all season long.

They are fast, festive, and delicious. Makes: 6–8 individual trifles (depending on glass size)

You Will Need

  • ½ tub (approx. 500g) Billy G’s Christmas Fruit Cake Dough
  • 284g St Dalfour Four Fruits Fruit Spread
  • 600g Pauls Vanilla Custard
  • 250g Dream Whip Whipped Dairy Topping Cream
  • Optional: ¼ cup Sweet Sherry – for soaking the cake pieces
  • To garnish and layer:
    • ½ cup crushed walnuts
    • 6–8 glacé cherries, chopped (plus extra halves for the top)
    • Grated dark chocolate or festive sprinkles

Quick Prep Tip

If your Billy G’s Christmas Fruit Cake Dough is frozen:

  • Leave it out for a couple of hours to thaw, or
  • Remove the lid, place it back on loosely, and microwave for 1 minute at a time, checking until soft and dough-like.
  • After you’ve taken out what you need, you can put the rest back in the freezer again.

Step-by-Step

Step 1: Bake the Cake Base

  1. Preheat oven to 160°C (fan forced).
  2. Divide half the tub (500g) of Billy G’s Christmas Fruit Cake Dough evenly into a 6-hole muffin tin (lined or lightly greased).
  3. Bake for 25–30 minutes, or until a skewer inserted comes out clean.
  4. Allow to cool completely, then cut or crumble into chunky, bite-sized pieces.

Step 2: Build the Layers

  1. Start with a few loose pieces of cake in the base of each glass.
    • Optional: drizzle with Sweet Sherry for that classic Christmas flavour.
  2. Spoon on a layer of St Dalfour Four Fruits Fruit Spread.
  3. Add a layer of Pauls Vanilla Custard.
  4. Scatter with crushed walnuts and chopped glacé cherries for texture and colour.
  5. Repeat the layering — cake, (optional sherry), fruit spread, custard, walnuts, and cherries — until the glass is nearly full.

Step 3: Finish with Cream & Garnish

  1. Top with a generous swirl or spoonful of Dream Whip Whipped Dairy Topping Cream.
  2. Sprinkle with walnuts, top with a glacé cherry half, and finish with grated chocolate or festive sprinkles.

Serve straight away, or refrigerate for 30 minutes to let the flavours mingle.

Bake your cake base up to three days in advance and store in an airtight container. Then assemble these little beauties in minutes when surprise guests arrive.
