Recipe – Christmas Fruit Cupcakes with Caramel and Ice Cream
Transform your holiday baking with these irresistible Christmas cupcakes! This quick and easy recipe combines the rich flavours of traditional Christmas fruit cake with the convenience of store-bought ingredients, perfect for busy festive seasons.
The gooey caramel and delectable vanilla ice-cream with salted caramel chocolate add a delightful sweetness that complements the fruity notes of the Christmas cake perfectly.
Ingredients:
- 1 x tub of Billy G’s Christmas Fruit Cake
- 1 x jar of caramel (such as Top’n’Fill or Bonne Maman Caramel)
- 1 x small bucket of gourmet vanilla ice-cream
- 1 x bar of Salted Caramel chocolate for shaving on top
Directions:
Preheat the oven to 160 degrees fan-forced (180 degrees normal). Let the tub of Billy G’s Christmas Fruit Cake thaw for several hours, or microwave for a minute or two to help it thaw out. This will save you the time and effort of making the cake from scratch and make it easier to spoon into the pan.
Before you start making the Christmas cupcakes, remove the vanilla ice-cream from the freezer so it softens a little. If you are after something special for Christmas, you could line the individual cupcakes with a paper insert. Place the dough evenly into each section of two large muffin tins with six compartments each making a total of 12 mini cakes. Bake around 50-60 mins until a bamboo skewer comes out clean when pushed deep into the centre. While still warm, use a small knife to cut out a section in the top to make a small well in the centre of each cake.
Now for the star of the show – the filling! Grab the caramel and use a spoon to fill the bottom of each cake generously. To serve, add a scoop of the premium vanilla ice cream on top of the caramel in each cake and put the lid back on that you first cut out. Shave some of the salted caramel chocolate on top of each cake and place onto a plate for serving.
