Golden Classic Meets Gingerbread

Golden Classic is Billy G’s most versatile gourmet cookie dough we have. Being a sweet yet relatively neutral tasting base you can add anything you want to it to create your own flavours, or simply use it to make sweet tasting treats everyone will love.

One of the things we love to do here at Australian Fundraising is add all sorts of things into our Golden Classic cookie dough. For this recipe, we’ve added in the flavours you’d expect to find in gingerbread cookies to the thawed out dough. When you use a cookie cutter and add some simple decorations after, you have some wonderful treats to add to your Christmas table.

Ingredients

  • Half a tub of Billy G’s Gourmet Cookie Dough – Golden Classic
  • 1 Tablespoon ground ginger (yes, 1 full Tablespoon!)
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • Optional: easy cookie icing or royal icing

Method

Step 1

Remove the cookie dough from the fridge or freezer and let it get to room temperature. This will usually take around 2-3 hours.

Step 2

Preheat the oven, and line 2 – 3 large baking trays with baking paper or silicone baking mats.

Step 3

Once the cookie dough is thawed, add in the ginger, cinnamon, allspice and cloves and mix it well.

Step 4

Roll out the cookie dough until it’s around 5mm thick.
Tips for rolling– the dough may crack and be crumbly as you roll. What’s helpful is picking it up and rotating it as you go. Additionally, you can use your fingers to help meld the cracking edges back together. The first few rolls are always the hardest since the dough is so stiff, but re-rolling the scraps is much easier.

Step 5

Use a cookie cutter to cut out the Christmas shapes you like, then place them on the tray lined with baking paper. Combine the left over cookie dough and roll it out again to get the most amount of biscuits.

Step 6

Bake at 180° for 15-18 minutes or until deep golden brown; cool.

Step 7

Once cooled, put your decorating hat on and start turning these cookies into Christmas sensations.

This is a lot of fun for the kids to get involved with as well, and makes for a great school holiday activity.
