Cinnamon Cookie Dough Cheesecake Bars

These Cinnamon Cookie Dough Cheesecake Bars are the ultimate treat. Rich, creamy cheesecake layered on golden, cinnamon-infused cookie dough with cookie dough crumbs on top. They are easy to make, totally irresistible, and guaranteed to be a crowd-pleaser at any gathering.
Ingredients:
- 1/2 tub of Billy G’s Gourmet Cinnamon Donut Cookie Dough
- 250g cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1/2 tsp vanilla extract
Instructions:
- Preheat oven to 175°C (350°F). Line two baking trays with parchment paper.
- Divide the cinnamon cookie dough in half. Press one half into a lined square baking tin to form a base, and spread the other half evenly on a separate lined baking tray.
- Bake both trays for 10-12 minutes or until golden brown.
- Remove from oven and let the cookie base cool completely in the tin. Transfer the second cookie sheet to a wire rack to cool.
- Prepare the cheesecake filling: In a bowl, mix cream cheese, sugar, egg, and vanilla until smooth.
- Pour the cheesecake filling over the cooled cookie base in the square tin and bake for 25 minutes or until the edges are set and the center has a slight jiggle.
- While baking, prepare the crumb topping: Break the second cookie tray into pieces and pulse in a blender or food processor until it forms a fine crumb.
- Let the cheesecake cool completely, then sprinkle the cinnamon cookie crumb generously over the top.
- Slice into bars and enjoy!
